Many evening dinners begin with me saying "so this might be horrible...". I'm what I like to consider a "creative cook". I like to make things up, and while sometimes they're disgusting (that's over dramatic - I've never made anything inedible... just not delectable) most of the time they're pretty darn tasty. Once in a while I even get the "oh you could serve this to guests honey" from my husband.
Creative cooking is one of the things that my commute affords me (look I've found another reason to be grateful for my commute... I continue to try). I've got a good hour to sit and think about what is in our fridge and cabinets and what I might be able to make out of it. The truth is, I'm not a good grocery shopper. I don't have the foresight and the ability to plan what I might be in the mood to make for six days after I've been at the store. So, I stopped trying. I'll give a couple of examples.
On Monday I was driving home and knew we had Udon noodles, carrots, mushrooms, chicken broth and chicken - what resulted was an Asian-type spicy noodle dish (thanks to some Thai Chili sauce). Yum. Delicious. Tonight I was driving home and knew we had half a bag of ravioli, the remaining mushrooms from Monday night, and a butternut squash - enter ravioli with cream squash sauce topped with mushrooms and some grated cheese. Tasty. Yum.
So while I can not follow a baking recipe to save my life (I've made some of the funniest inedible chocolate chip cookies in my life - I swear, I couldn't recreate them if I tried), I've got some ability to drum up a tasty dinner from what's around and available. I also have a very understanding husband who enjoys cereal for dinner when I either make something not so tasty or I don't feel like cooking at all.
